The distillery is run by Nickolas Franchino, whose Italian family used to make spirits and liqueurs back home. To bring it down to bottling strength, a robust 46% ABV, they use naturally refined Cotswolds water. I don't drink a lot of gin but tried this at the distillery yesterday and loved it and bought a bottle The lavender is really evident on the nose and it has an excellent flavour either neat or mixed with the uniper evident but not dominant.

Each was distilled individually over the course of a month so that they could get a better feel of how they could be used in the final recipe.The black pepper and lavender bring a really unique element but it never strays away from being a classic, juniper-heavy gin with a refreshing kick and a characterful and endlessly oscillating sweet-spice duality. Nine botanicals, including lavender, fresh lime and pink grapefruit peel, combine to create a full-bodied and smooth gin. Then the unique botanical mix of Cotswolds lavender and bay leaf, grapefruit, lime, black pepper and cardamom seed are added into the bespoke Holstein pot still for distillation before finishing with naturally refined Cotswolds water.

Tasting Notes: Nose: Fresh notes of grapefruit with earthy coriander backed up by sweet piney juniper. The Cotswolds – despite its bountiful land and booming tourist industry – had no distilleries in its 787 square miles.
