Wheat, barley and rye are gluten-containing grains, so they're not gluten free in any form, whole or refined. I always prefer a base of Better Batter classic blend gluten free flour as a base for my gluten free yeast bread. I've kept this gluten free brown bread as simple as possible so it's best to bake it up and then enjoy it on the day. Have found that the brown flour does not make such a light loaf (which I don't mind) - but it often rises excessively around the edges and sinks hugely in the middle, making for a very strangely shaped loaf. The grains in this bread, which are rice (brown, a whole grain, and white, a refined grain), corn, sorghum, teff, and oats are all gluten-free grains.

The culprit ingredient was the Carob in the flour - I am allergic to peanuts and soya and Carob is a relative to these, a legume. I used a basic supermarket seed mix which included sunflower seeds, pumpkin seeds, sesame seeds and golden flax seeds. Recently I noticed Instant yeast on my supermarket shelf and purchased it instead of my usual dry yeast. While we have taken care in preparing this summary and believe it is accurate, it is not a substitute for your reading the product packaging and label prior to use. We are however changing our supplier in the near future and intend to supply the product derived purely from non GM corn.Until I wrote my third cookbook, Gluten Free on a Shoestring Bakes Bread, batter-style yeast bread was the only sort of gluten free bread recipe I had ever heard of.
